Overview
In 1955, Struyk et al. isolated Streptomyces natalis from South Africa and isolated a new antifungal substance - horseradish toxin. In 1959, Bums et al. isolated Tensenycin from the culture of Streptomyces in Chattanooga, Tennessee, USA. Later, it was proven that horseradish toxin and Tennessee toxin were the same substance and were uniformly named Natamycin natamycin. In 1978, in Chemicalbook, a 5% natamycin suspension developed by Alcon was approved by the US FDA for the clinical treatment of fungal keratitis, and natamycin was used as the first-line drug for the treatment of fungal keratitis. In 1982, the US FDA officially approved Natamycin as a food preservative; The Standardization Technical Committee for Food Additives in China officially approved natamycin as a food preservative in 1996.
ApplicationsNatamycin is a "polyene macrocyclic lactone" fungal inhibitor produced by fermentation of Streptomyces natalis, and is currently the only internationally approved high-efficiency, broad-spectrum, safe, and natural antifungal food preservative. Natamycin relies on its lactone ring structure to interact with sterols on the fungal cell membrane, forming sterol compounds that disrupt the structure of the cell membrane. The hydrophilic part of macrolides forms water pores on the membrane, damaging the permeability of the cell membrane and causing the leakage of amino acids, electrolytes, and other substances inside the bacteria, leading to bacterial death. Due to its mechanism of action as a polyene antibiotic, natamycin binds to sterols on the fungal cell membrane. Animal cells lack sterols on their surface and are insensitive to polyene antibiotics. Therefore, natamycin is harmless to the human body and is difficult to be absorbed by the digestive tract. No mutagenic, carcinogenic, or sensitizing effects. It is a natural antifungal agent with the characteristics of safety, high efficiency, naturalness, and health.
